Organic Chia Blueberry Muffins
DIRECTIONS:
Preheat oven to 350°. Place all the dry ingredients into a Kitchen Aid mixing bowl. Melt coconut oil in a pan on the stovetop and then pour it into the mixing bowl. Add all wet ingredients to the mixing bowl. Wash the blueberries and add them to the mixing bowl. Using the whisk attachment, mix all the ingredients on low (1-2) until thoroughly combined. Grease 12 cup muffin pan with coconut oil. Scoop mixture into muffin pan. Sprinkle remaining tablespoon of chia seeds on top of muffins. Bake for approximately 25 minutes. Let cool. Enjoy!
INGREDIENTS
1 ¾ cups Bob’s Red Mill organic unbleached all-purpose flour*
1 tablespoon baking powder
½ teaspoon sea salt
¾ teaspoon organic cinnamon
½ teaspoon organic cardamom
3 tablespoons organic chia seeds (save 1 tablespoon to sprinkle on top)
6 tablespoons organic unrefined coconut oil (melted)
¾ cup Trader Joe’s organic full fat canned coconut milk
4-5 tablespoons organic maple syrup
1 cup fresh organic blueberries
*other flours may be used to make it gluten-free
**other plant-based milks may be used (to make it dairy-free)
