Banana Applesauce Muffins

These banana applesauce muffins are low in sugar, dairy-free, and vegan. The unsweetened applesauce gives these muffins a nice texture. They are satisfying and sweet.

Ingredients:
3 cups organic unbleached all-purpose white flour
1 cup organic unsweetened applesauce
1/4 cup organic panela*
2 teaspoons organic ground cinnamon
2 teaspoons baking powder double acting
1 teaspoon baking soda
1 teaspoon ground nutmeg
1 teaspoon iodized salt
2 ripe bananas (mashed)
1-1.5 cups organic coconut milk
*Panela is made in Columbia and is a healthier, more nutritious sweetener than turbinado, brown, and white sugar.

Directions:
Preheat oven to 350° F
Grease 12 count muffin pan with coconut oil
Mash or cut bananas and put them into Kitchen Aid mixer.
Add all other ingredients to mixer
Using the whisk attachment, blend all the ingredients until thoroughly mixed
Pour batter into greased muffin cups until each is almost full
Bake on 350°F for about 35 minutes
