Veggie +/- Tofu Kabobs
Don’t have a grill? That’s ok, you can cook these vegetable kabobs in your oven. It’s quite simple. All you need is veggies, skewers, a baking sheet, olive oil, spices/herbs (if you wish), a vegetable knife, mixing bowl and a cutting board. Shop for your veggies at your local farmer’s market, chop them up, throw them in the mixing bowl with some olive oil and spices/herbs and mix them around, put them on the skewers, transfer the veggie loaded kabob to a baking sheet, and cook on 400° F for 15-20 minutes or until tender. Optional: Add cubed extra firm tofu. Note: Tofu will take longer to roast, so if you want the tofu crispy, you will need to cook it for at least 30 minutes. Enjoy!
