Vegan Stir fry
The eat meati classic cutlet is made from mushroom root and has a meaty texture. It is free of hazardous additives, rich in protein, and has lots of fiber. This recipe is a wonderful alternative to traditional chicken stir fry.
By the way just because it is made from mushroom root does not mean it tastes like mushrooms….so if you don’t care for mushrooms, you still may like this meal (just skip the steamed mushrooms ).
The eat meati brand also makes a classic steak (also made from mushroom root) if you are looking for an alternative to steak for your stir fry meal.
Ingredients:
1 eat meati classic cutlet (sliced)
1 small organic sweet onion (diced)
2 organic carrots (chopped)
6 oz organic broccoli florets
4 oz white button/baby bella mushrooms (chopped)
Juice from lemon
1-2 Tablespoons organic extra virgin olive oil
1 Tablespoon dried rosemary
Optional: 1 cup basmati or jasmine rice
Directions:
Slice the meati classic cutlet into thin slices. Wash, peel, and chop carrots into smaller pieces. Wash broccoli florets. Wash and dice the onion. Place olive oil, sliced meati cutlet, carrots, broccoli and diced onion in a skillet and cook on medium heat. Stir intermittently with a wooden spoon or mix together using tongs. Wash and chop the potatoes and mushrooms and cook them in a steamer on medium high heat until soft. Once the cutlet, carrots, broccoli, onion are done cooking in the skillet, serve it over the steamed potatoes and mushrooms. You may also serve over rice if you prefer. Serves 1-2.
