Simply Spectacular Vegan Spanakopita
Vegan Spanakopita is another item that is hard to find, but don’t worry it is really easy to make and tastes just like the non-vegan one (without the effects of real dairy). If we are completely honest, many of the non-dairy cheeses are nasty, but Violife Feta does not disappoint! Give it a try. It is amazing!
Ingredients:
Plant-based egg roll wraps
Enzo Organic Olive Oil*
Violife Feta
Organic Frozen Spinach
Optional: Dried basil
*We used Enzo Organic Medium Olive Oil (not basil as seen in picture)
Directions:
Lay out egg roll wraps on cutting board and drizzle organic olive oil over each
Thinly slice vegan feta cheese and sprinkle some on egg roll wraps over the olive oil
Thoroughly wash frozen spinach (may need to let thaw a little bit) and sprinkle on each egg roll wrap over the cheese
Sprinkle a little more vegan feta over the top
Carefully fold the wrap with all the fillings into a square or triangle
Line a cookie sheet with parchment paper and cook on 400°F for 20 min then reduce the temperature to 375°F until crisp (10 + minutes)*

Stores in fridge for 3-5 days (freeze otherwise)
