Plant-based Waffles/Pancakes
These plant-based waffles/pancakes are kid approved and a healthy alternative to traditional waffles and pancakes. You can make them gluten-free by using gluten-free organic oats, omitting the flour or using gluten-free flour. We hope you like them!
Ingredients:
3-4 cups of oats (ground into flour)*
1 cup all purpose flour* (omit if gluten-free or use gluten-free flour)
1 cup applesauce*
1 tablespoon flaxseed meal* (mixed with 3 tablespoons of filtered water)
2 teaspoons cinnamon*
13.5 oz Trader Joe’s canned coconut milk* (use liquid only)**
1/4-1/2 cup Enzo medium extra virgin olive oil*
1 teaspoon baking soda
1 teaspoon baking powder
*All organic ingredients
**other plant-based milks can be used (we’ve also used Three Trees Almond Milk)
Directions:
Blend organic oats in vitamix until it is a flour consistency. Pour oat flour into a large bowl. In a small bowl mix flaxseed meal with water and set aside. Combine remaining ingredients into the large bowl and mix with a wooden spoon, whisk, or large spoon. You may need to add filtered water if the batter is too dry. If the batter is too wet add more oat flour until a pancake batter consistency is achieved. Add flaxseed meal to the large bowl and mix well. Pour a teaspoon of olive oil on a skillet and turn on the burner to medium heat to make pancakes or turn on waffle iron to make waffles. Pour 1/4 cup of batter on the skillet and flip after cooking for a few minutes on one side. Cook other side until pancake is thoroughly cooked. Repeat with the rest of the batter. Cook waffles according to the waffle maker instructions. Quantity of pancakes/waffles you can make depend on the batter amount. Place pancakes or waffles on cooling rack/hot stone to cool. Top with chopped nuts, fruit, plant-based butter, and/or pure maple syrup.
