Mango Coconut Milk Ice Pops
Summer is here and these 2 ingredient popsicles are easy to make and refreshing. All you need is fresh or frozen organic mango and full fat canned coconut milk chunks! If using fresh mango, peel the skin of 3 mangos and cut them into smaller pieces. Add mango to a high-speed blender along with 1/4 cup of the chunky part of the coconut milk. If there are no chunks in the canned coconut milk, use the thicker liquid. Blend the two ingredients thoroughly in the blender and pour it into ice trays. Cover the filled ice tray with press nā seal (or plastic wrap), cut small slits on top and in the middle of each ice pop and place a popsicle stick in the slit. Freeze overnight. Enjoy the next day. Makes one ice tray of popsicles.
