Easy Sweet Potato Fries
We used to buy sweet potato fries in the freezer section. Then we discovered that sweet potato fries are so easy to make! All you need are sweet potatoes! You can buy sweet potatoes in bulk at Costco, cut them up in the shape of fries (make them thin or thick, cut them into wedges, or the shape you prefer). The leftovers can be stored in freezer bags with parchment paper to pull from the freezer whenever you want more.
Directions:
Preheat oven to 400°F
Wash and chop sweet potatoes into the fry shape of your choice (thin, thick, wedges, etc)
Place chop potatoes in a large mixing bowl and drizzle extra virgin olive oil on them
Season fries with dried herbs and/or spices and/or sea salt
Toss the fries in the bowl to distribute the oil and dried spices, herbs, and salt
Line a baking sheet with parchment paper
Using tongs to arrange the fries on the baking sheet leaving space in between
Bake on 400°F for 30-40 minutes, flipping the flies over in between the cooking time
Baking times vary depending on the oven and the temperature you chose to bake them
Let cool before eating

Note: Baking at higher than 400°F will require less time (parchment paper will burn and is not recommended for baking above 420°F
