Comforting Vegan Chicken Noodle Soup

Maybe you are well and just craving a healthy chicken noodle soup minus the chicken - we’ve got you covered!

Materials:

1 large pot
Liquid measuring cups
Regular measuring cups
Measuring spoons
Cooking utensil or spoon (to stir)
Cutting board
Vegetable knife
Cooking shears (scissors)


Ingredients:
2 cubes of low sodium Vegetable Bouillon (dissolved in 4-5 cups of hot water)
4 fingerling or 3 small red or white potatoes
2-3 large carrots
3 ribs of celery
1/2 cup red onion
1-10 oz package of Gardein meatless chick’n strips
1/2 cup of bow-tie pasta (or pasta of choice)
1-2 tablespoons olive oil to sauté onion**

*Add more water if needed

Directions:
Chop the onion, celery and carrots into small pieces. Dice the potatoes. Add a small amount of broth and the chopped onion to a pot and sauté for 3-5 minutes (or sauté them in olive oil). Add carrots, celery, and potatoes to the pot along with 2 cup of broth. Cook on medium to high heat and stir frequently for 5 minutes. Add the remaining broth and pasta to the pot. Add Gardein meatless chick’n strips to the pot and continue mixing all the ingredients and cooking until pasta is thoroughly cooked, the potatoes are soft, and the chick’n strips are tender. You may want to cut the chick’n strips into smaller pieces using cooking shears.
