Chocolate Cupcakes Sweetened with Local Honey

Materials:
Kitchen Aid Professional 590 watts 6 quart mixer
12 count cupcake pan
12 cup liners
measuring cups and spoons
saucepan (if needed to melt coconut oil)
spatula
large mixing bowl (if needed)
spoon (if needed)
Cupcake ingredients:
1 1/2-2 cups organic unbleached flour
1/2 cup Navitas organic unsweetened cacao powder
1/2 cup local honey (or more if preferred)
1 tsp baking soda
1 cup Malk organic almond milk
1/2 tsp pink sea salt
2 tsp Simply Organic Madagascar pure vanilla extract
1/2-1/3 cup Trader Joe’s organic unrefined coconut oil (melted)
3 tbsp Trader Joe’s organic unsweetened applesauce
1 Tbsp Napoleon white Italian vinegar
Frosting ingredients:
3/4 cup soy-free Earth Balance buttery spread
1/2-3/4 cup local honey (+/- depending on your sweet/bitter taste preferences)
3/4 cup Navitas organic unsweetened cacao powder
1 tsp Simply Organic Madagascar pure vanilla extract
1/4 pink sea salt
3 tbsp Malk organic almond milk
Cupcake Directions:
Melt coconut oil in a saucepan unless it is melted already. Combine flour, cacao powder, baking soda, and salt into a Kitchen Aid mixer. Add coconut oil and remaining ingredients to mixer and blend until smooth. Do not over-blend. Place paper cupcake liners in a 12 count cupcake pan and sprinkle flour in the bottom of each. Using a spatula, evenly distribute the cupcake batter among the 12 cupcake holders in the pan. Cover the pan with parchment paper or paper towel and refrigerate for 30 minutes-1 hour. Preheat oven to 350 degrees F. Remove filled cupcake pan from refrigerator and cook on 350 degrees F for 20-25 minutes.
Chocolate Frosting Directions:
Clean Kitchen Aid mixing bowl before preparing the frosting. Combine Earth Balance buttery spread, honey, cacao powder, vanilla extract, salt and almond milk in the Kitchen Aid mixer and blend on medium to high until a frosting-like consistency is achieved. Allow cupcakes to cool before frosting them.
