Broad Beans (aka Fava Beans)
Broad beans (aka Fava Beans) are full of vitamins and minerals including folate, manganese, copper, phosphorus, magnesium, iron, potassium, thiamine, and zinc. They are also high in fiber. They take a little prep work before you can eat them, but it’s worth it for the healthy nutrition they can provide! Note: If you have the inherited, metabolic disorder G6PD deficiency DO NOT eat these as they can cause hemolytic anemia and serious, life-threatening reactions.
Here is how to prepare them:
Slice or rip open the pod to remove the beans.
Bring a pot of water to a boil and blanch the beans (boil for 90 sec).
Remove beans from the pot and peel off the skin.
