Unsweetened Coconut Applesauce Crackers from Almond Pulp Made into Flour

Unsweetened Coconut Applesauce Crackers

Ingredients:

  • 1 Tablespoon organic ground flaxseed

  • 3 Tablespoons filtered water (warm)

  • 1 cup almond flour* (made from dried out almond pulp)

  • 1/2 cup organic unsweetened flake coconut

  • 1/4 cup organic unrefined extra-virgin coconut oil (melted)

  • 1/2 cup organic unsweetened applesauce

  • Dash of sea salt

Instructions:

1. Preheat oven to 350 F

2. Combine flaxseed and water, mix well, and let stand for 5 minutes.

3. Briefly blend coconut oil and applesauce in food processor

4. Add flaxseed water mixture to food processor and pulse a few times.

5. Add almond flour, flake coconut, and salt to food processor and blend until all ingredients are evenly distributed (not too much!)

6. Shape dough into a ball.

7. Roll out dough using a rolling pin until dough is about 1/4 inch thick.

8. Cut dough into desired shapes. (We used a pizza cutter!)

9. Line cookie sheet with parchment paper and evenly distribute crackers.

10. Bake for 8 minutes, flip, and continue baking for 2-3 minutes.

Enjoy immediately

Note: Store in sealed container in refrigerator if not eaten right away. Crackers will get soft, so for best results eat them right after you bake them! You could also toast them if you eat them after having been stored in the refrigerator.
