Simply Roasted Turmeric Cauliflower

Ingredients:
Head of organic cauliflower
2 teaspoons curry powder*
2 teaspoons turmeric
1/2 c melted unrefined coconut oil
Sea salt to taste
1 lemon**

*see below to make curry powder yourself

Directions:
Preheat oven to 400 F.  Line baking sheet with parchment paper.  Wash cauliflower and cut it into florets.  Melt coconut oil in a saucepan. Combine all ingredients into a large bowl and mix well.  Transfer cauliflower to baking sheet and spread it out. Bake for 20-25 min or until crisp. Squeeze juice from a lemon on the roasted cauliflower for extra flavor. Enjoy!

Curry Powder:
Ingredients:
1 tablespoon ground coriander
1.5 teaspoons ground cumin
1 teaspoon turmeric
1/2 teaspoon ground ginger
1/2 teaspoon chili powder
1/2 teaspoon ground white/black pepper
1/2 teaspoon ground fenugreek*
1/2 teaspoon cinnamon*
*optional

Combine all ingredients and mix well. Use in place of ready made curry powder. If you are using turmeric in the curry powder, only 1 teaspoon is necessary (instead of 2) for the above recipe. Store in a covered glass container and keep in a dry place.
